Broccoli and Sun Dried Tomato Pasta

Saute up some garlic and broccoli. Toss with cooked whole wheat pasta, chopped sundried tomatoes, black olives, nooch, lemon juice, chickpeas, and a bit of arugula.

[Vegan] Meaty Beans
Saute some chopped onion, and add TVP. Add enough water to rehydrate the TVP. For seasoning, add in a splash of soy sauce, paprika, bbq sauce, vegan worchestire sauce, chili powder, home made veggie broth powder.
Add in cooked beans (I used a mixture), along with canned tomato sauce.
Top with goat cheeze.

B'nut Squash and Black Eyed Pea Soup
In the meantime, here's the soup I've been happily indulging in for the past few days. It's lovely - I'm loving this butternut squash stuff...

Two Serving Veggie Pot Pie-Thingy
Hey. I got up at 4am this morning, and couldn't go back to sleep. Bleck. The worst part of it is I didn't get to sleep until 10 or so last night, since I was working on an English project, then had to come home and make soup, salad dressing, pizza, and salads (the pizza was AMAZING, by the way. but more on that later).
Anyhoo, here's a lovely little dish that makes 2 servings... in an effort to get though all of my saved recipes I am cutting most things down to 2 servings...
I added a gravy sort of thing, and I think that made this dish taste SOO much better than the original recipe. But to each his own, I suppose.
Adapted from Sunday Morning Banana Pancakes
For the crust:
mix 1/4 cup flour, 1 tbsp applesauce, and 2 tbsp cold water. Spread into 2 ramkins coated with nonstick spray, and bake for 10 minutes, until firm.
For the Tofu:
Mix crumbled tofu, stemmed/wilted spinach, nooch, lemon juice, and garlic. You should total about 3/4 cup-ish tofu mix
For the veggies:
Peel, cube, and boil a very small sweet potato until tender.
Saute bell pepper, red onion, and mushroom until almost tender. Add chopped rosemary, paprika, vegan worchestire sauce, home made vegetable broth powder, a few drops butter extract, and a small corn starch slurry. Add a few tbsp water as needed to make it a sort of gravy.
Add the tofu mix to the ramkins, then top with veggies. Bake at 375 for 25 minutes, until heated through.

Potato Soup
Potato soup = time for winter. I was so excited - today it was dark out when I left school. Cooooolest thing evah! Seriously.

Mushrooms and Spinach over Rice
Oi. So, please tell me WHY I work out for an hour every day and the state still mandates that I be in PE. Seriously. It's so dumb.
Anyway, I'm NO good at sports, I just like to work out. Sheesh! We started tennis yesterday, I have no clue how to play tennis (!)... so my wrists hurt like crap... my left hand is really having a hard time typing right now. Argh. Seriously. Why do I have to take the stupid subject?
Although, it does allow me to eat just a wee bit more in the evenings, which is pretty much the only good thing... more yummies for me!

Saute chopped onion, garlic, and mushrooms until tender. Toss in some spinach (washed, destemmed, and torn), fresh chopped rosemary, nooch, soy sauce, corn starch + water, and home made veggie broth powder. Add enough water to make it a gravy-type thing, simmer for a few minutes until thick, and serve over rice. Simple but A-Mazing!

Saute 1/2 small onion, a few slices of bell pepper, and 2 cloves garlic. Add in 1/2 cup cooked kidney beans, 1/2 cup Soyrizo, 1/2 tbsp cumin, chili pepper, diced tomatoes, home made veggie broth powder, and 1/4 cup TVP. Add in enough water so the TVP is rehydrated, and let simmer for a few minutes. Spread inbetween 2 tortillas, and bake for a few minutes. Easy and yum!

That totally got so many laughs from my friends... :D

Welcome Fall! Split Pea Soup
Ok, so I'm not so big on pureed soups - you can probably tell. They are just too... well... uniform. No chunks, no excitement. Boo hoo. So that kind of ruled out split pea soup for me - and then I tried this recipe. Nom nom nom! Good stuff, this soup. And quite simple to make, too.
Adapte from WTHDAVEA
Drizzle with sugar free maple syrup and roast at 425 for 20 minutes:
- 1 large sweet potato, peeled and cubed
- 1 onion, roughly chopped
- 3/4 lb parsnips, peeled and coined
- Quite a few carrots, coined
- A few russet potatoes, diced
- 2 tbsp homemade vegetable broth powder (GOOD STUFF, just use about 1/2 of the salt called for, and I left out the tumeric because I hate it)
- A dash of cloves
- Liquid smoke (hickory flavoured, if possible)
- Dried rosemary
Puree the soup base, and let it thicken by cooking with the lid off if needed. This will thicken up a lot over night.
Serve: veggies, broth, seitan of choice, and sugar free apricot jam

It's Pizza... No, It's Quinoa... No, It's Pizzaquinoa!
So, I made this Pizza Quinoa casserole...
It was the PERFECT start to a 4 day weekend! What flavour! Excellent!
And, now since I have a bit more time to type tonight, I will take advantage of that and rant for a bit. I think all of my friends, and I now that I think about it, have senioritis. It's bad, and the year is not even half overwith yet. I feel like my emotions inside are kind of rolling around, like a giant wad of tangled thread. It's like of weird - I'm either laughing or about to cry or both. I'll stop now, and move on to food... so I don't get too depressed.

In a casserole dish, combine:
- 1/2 cup dried quinoa, cooked with 1 cup water
- 1/2 onion, finely chopped and sauteed
- 2 cloves garlic, chopped and sauteed
- 1/3 red bell pepper, finely chopped and sauteed
- 3 tbsp home made ketchup (heavenly stuff - use stevia for the sucanat to reduce calories)
- 2 tbsp tomato paste
- 1 tbsp each freshly chopped basil and oregano
- 1 tsp sumac
- 1 tsp fennel seeds
- 2 tbsp nooch
- a few drops liquid stevia
bake at 350 for 20 minutes or so

Sweet Potato Balls and Spaghetti
So, I've got some pasta for you guys tonight!
Although I made this ages ago, I seem to remember that is was super yummy, sooo..
Quite a good first 'meat'ball recipe for me! They stuck together, which was really nice.
Sweet Potato Balls from Fat Free Vegan
Sauce from Ambitious Kitchen
For the sauce: blend until smooth, and heat:
- 1 roasted hatch chili pepper
- 28 oz can salt-free tomatoes
- 3/4 cup chopped onion, sauteed
- 5 cloves garlic, chopped, sauteed
- 2 cups water
- Chick'n bouillon for 2 cups of broth
- Cumin to taste
- ~1/4 cup cilantro
For the 'meat'balls, mix together, shape into balls, and bake at 350 for 30 minutes:
- 3/4 cup chopped mushrooms, sauteed
- 1 small sweet potato, peeled, boiled, mashed
- 1/2 cup cooked quinoa
- 1/2 onion, chopped, cooked
- 3 cloves garlic, chopped, sauteed
- 1 cup chickpeas
- 1 tbsp flax meal
- 1 tbsp nooch
- oregano, paprika, fennel, sage, liquid smoke to flavour
Serve sauce over pasta, topped with 'meat'balls

Very Full Burritos with Salsa and "Feta"
Wraps are so frustrating to photograph... sorry.. (it doesn't help that I was hungry!)
I promise you, though, these were excellent. Filling, flavourful, and just messy enough.

On a panini press, cook sliced onions and mushrooms with some chopped garlic.
Mix with heated:
- diced & cooked potato
- black beans
- chopped basil & parsley
- nooch
- paprika
Pile into a wrap, and top with feta and salsa

Weeeeird Pizza #2
Tofu fingers.. on a pizza? Sure!
It actually worked out really well. Quite intense goodness!
Adapted from Veg-Bergers
First, make some mini tofu logs, about as big as your pinky. In one bowl, mix 1/3 cup soy milk with 1 tbsp dijon mustard. In another bowl, mix 1/2 cup cornmeal, paprika, thyme, basil, and oregano. Dip the tofu in the milk, then coat with cornmeal. Bake in the oven at 350 for 20 minutes, until firm.
Spread a pizza crust (cooked for a few minutes in the oven) with tomato sauce (from a can), and sprinkle with nooch. Top with broccoli, sun-dried tomatoes, orange pieces, and tofu. Bake for 20 minutes at 350, until broccoli is cooked. Serve with ketchup, incase the tofu falls off. ;)

I'm going to the Big Apple tomorrow! Yup, that's right! For college visits/vacation, so I won't be here for the next few days... be back next Wednesday, though, with loooots of pictures of good vegan restaurant food.
