Weeeeird Pizza #2

Tofu fingers.. on a pizza?  Sure!
 
 
It actually worked out really well.  Quite intense goodness!




Adapted from Veg-Bergers

First, make some mini tofu logs, about as big as your pinky.  In one bowl, mix 1/3 cup soy milk with 1 tbsp dijon mustard.  In another bowl, mix 1/2 cup cornmeal, paprika, thyme, basil, and oregano.  Dip the tofu in the milk, then coat with cornmeal.  Bake in the oven at 350 for 20 minutes, until firm.
Spread a pizza crust (cooked for a few minutes in the oven) with tomato sauce (from a can), and sprinkle with nooch.  Top with broccoli, sun-dried tomatoes, orange pieces, and tofu.  Bake for 20 minutes at 350, until broccoli is cooked.  Serve with ketchup, incase the tofu falls off. ;)

Limey Wild Rice and Broccoli Salad

I hope you like lime...

Because I have a pile of lime-intense food for you today.


If you don't want to be BLASTED with lime, I would cut it down drastically... same goes for the lemon.  All kidding aside, though, this was one unique dish!

Cook up some wild rice.
Chop and grill on a panini press onion and broccoli.
The dressing was... (all blended in my lovely Mr. V)
1 orange
1 lime
1 lemon
~6 oz tofu to thicken
a few drops stevia extract
a large handful of fresh basil leaves

The whole shebang got topped with sunflower seeds and chopped avocado.

Saturday Dessert Plate #2

I think I'll start posting this every Sunday.  Some things remain the same, and some change!

Newcomers and updates:


The candied almonds were completely frozen this time, and the texture was much better.  The taste is still somewhat off, but that *might* be remedied next week... stay tuned!
Made some orange cardamom mousse!  It's not that hard... really.  Chuck into a vitamix: 1 small peeled orange, ~8 oz tofu (I used half silken and half firm because that's what was readily available), 1/2 tsp cardamom powder, a small splash of almond milk, ~1/4 cup sugar free maple syrup, ~3 tbsp stevia (might want to add more, it could have been sweeter), and 3 tbsp cocoa powder.  Blend until smooth - and further.  The texture of this was great, with the help of Mr. V!  Just slightly puffy....  Recipe adapted from Oh My Veggies.
No-bake chocolate-PB balls!  The texture was a bit odd - still needs some work.  But the flavour was all there.  Mix together 2 tbsp brown rice flour (might go with oat flour, or straight up oatmeal, next time), 2 tbsp almond meal, 1  scant tbsp cocoa powder, 1 tbsp stevia  (would add more next time), a heaping tbsp PB2, and enough sugar free maple syrup to make a dough-like substance.  Chill until firm.  Recipe adapted from Chocolawty.

BBQ Tofu Salad

Yay!  Tofuuuuuuuuuuuuuu!!!!!!


 You have no idea how long I have been wanting to say that.


Yup.



I'm dead serious.



Adapted from Keepin' It Kind
First up, tofu: Cut one slab of tofu per person, press, and then slather with this bbq sauce (using 6 oz tomato paste, not 4, and no need to cook it).  Bake for 30 minutes at 375, and slather with more bbq sauce.
Base: lettuce.
Add in the tofu, black olives, canned mandarine oranges, broccoli, avocado, and top with this dressing.

Setian and Mandarin Stir Fry

Sauce: balsamic vinegar, soy sauce, dried ginger, mirin, corn starch, cooking sherry, vegetable bouillon.
Veggies: garlic, onions, carrots, bell pepper, setian, mandarin oranges
Served over brown rice.

Stir Fry - Pineapple Orange

Sweet.

Simple.

Sauce: Pineapple juice, orange zest, soy sauce, rice vinegar, corn starch
Veggies: broccoli, carrots, onion, bok choy
Served with brown rice, Orange-Pineapple Setian, and chopsticks

What's Up Wednesday #2

Gingerbread Cookie Oatmeal.  That's right. So sweet!  A combination of Bottomless Oatmeal and Gingerbread Oatmeal (minus the molasses, lots of sugar free maple syrup, no coconut, steiva)



Been reading a good book: They Came to Baghdad by Agatha Christie. It's nice to actually read a book again, since I've been so busy with school work :D



I made these coconut flour sandwich thins (with guar gum and no nooch)!  Since the bread that I've been using had milk in the ingredients list (!) I knew I had to switch.  So, then I stumbled onto Foodie Fiasco - and WOW what a fabulous blog!  So many low-cal, healthy things.  Anyway, the sandwiches were super good.  Although, next time, I would make 8 pieces instead of 4, and then there would be no need to cut them in half. (UPDATE: I did make the 8 pieces yesterday, and it worked marvelously!)

Pineapple-Orange Setian - using oatmeal for the soy flour, mirin for the olive oil, and leaving out the nooch.  So, it was quite an ordeal to get this cooked!  First, I steamed it for 30 minutes.  It was still undone, so I baked it at 350 for 15 minutes.  Then I had it in a stir fry, but it was still super gummy.  the next day, I cut it into thin strips and grilled it on my panini press, and now it's OK! ;)  Next time, I would just steam it for 45 minutes and then grill it.  THAT should be muuuuch easier!



I've been enjoying this sandwich for lunch, on the sandwich thins that I made, with the Pineapple Orange Setian.





Super yummy salad dressing, a great way to use up that tomato paste in the fridge! ;)
(Of course with lots of changes: tomato paste for sauce, added LOTS of mirin, cider vinegar for the tarragon vinegar [have any of you ever seen this? I sure haven't], onion powder not juice, and Italian herbs in stead of dill)

Quinoa Salad

Erm.  Not much to say tonight.  I'm rather tired.. although the salad was pretty good and easy.
I totally meant to add tofu - had it in the micorwave and everything!  Then I forgot.  I had just finished my portion, and then I was like "Oh my gosh, the tofu!"  But it was super good, none the less...

Ok, so:
Quinoa + finely chopped sauteed onion, cooked in half orange juice and half water, mixed with nooch and spicy seasoning + paprika
Shredded carrots, chopped oranges, sliced avocado
Walnuts
Tofu mayo (partially cooked silken tofu blended with lemon)
