Quickie Quesadilla

Ok, this recipe looked too weird not to try, so I made it the other night... Yes.  Yeeeeees.  It was good!

Spread a tortilla with cranberry sauce (made with stevia, chunky kind), pistachios, vegan goat cheese, and grilled onion + broccoli.  Simple, but it really has that OMG WOWZA factor!

Creamy White Bean Soup

Today was a big day for me.  I WORE A DRESS FOR THE FIRST TIME IN 12 YEARS.  ?! Seriously?  Yes.  Seriously.  I can't believe myself...



But, yes.  Here's some buttery, creamy, heart-warming soup for you!

Veggies:
  • Onion
  • Carrot
  • Celery
  • Garlic
  • Potato

Seasonings:

Other:
  • Great northern beans
  • Seitan
  • Plain, unsweetened almond milk

Once things are fully cooked, blend a bit of the soup for creaminess (just not the seitan...)

Mushrooms and Spinach over Rice

Oi.  So, please tell me WHY I work out for an hour every day and the state still mandates that I be in PE.  Seriously.  It's so dumb. 
 
 
Anyway, I'm NO good at sports, I just like to work out.  Sheesh!  We started tennis yesterday, I have no clue how to play tennis (!)... so my wrists hurt like crap... my left hand is really having a hard time typing right now.  Argh.  Seriously.  Why do I have to take the stupid subject?
Although, it does allow me to eat just a wee bit more in the evenings, which is pretty much the only good thing... more yummies for me!

Saute chopped onion, garlic, and mushrooms until tender.  Toss in some spinach (washed, destemmed, and torn), fresh chopped rosemary, nooch, soy sauce, corn starch + water, and home made veggie broth powder.  Add enough water to make it a gravy-type thing, simmer for a few minutes until thick, and serve over rice.  Simple but A-Mazing!

Chilli Quesadilla

Saute 1/2 small onion, a few slices of bell pepper, and 2 cloves garlic.  Add in 1/2 cup cooked kidney beans, 1/2 cup Soyrizo, 1/2 tbsp cumin, chili pepper, diced tomatoes, home made veggie broth powder, and 1/4 cup TVP.  Add in enough water so the TVP is rehydrated, and let simmer for a few minutes.  Spread inbetween 2 tortillas, and bake for a few minutes.  Easy and yum!

Mushroom-y Burgers

Yeah, there are more than a MILLION veggie burger recipes out there.

 So, really, this one is just a drop in the bucket.

In a blender (I used Mister V), finely chop/blend 1/2 lb criminis, 1/2 carrot, 1 small red onion, and 1 clove garlic.  Don't sweat it if there are a few big chunks.  (The mixture will look pretty gross... sorry!)  Pour into a frying pan, and saute for about 8 minutes to get the onions cooked.  Stir together with 1/2 cup dried quinoa cooked with 3/4 cup water, ~1/4 cup nooch, ~1/2 cup flavoured bread crumbs, 1 tbsp flax meal, paprika, a bit of bbq sauce, Italian seasoning, and a splash of soy sauce.  Cook for ~20 minutes on a panini press (just plop some blobs on the press and kind of shape them into burgers).  Serve with buns, pickles, burger-tofu-mayo, and cheeze sauce.

Baked Black Beans and Veggies

More Brussels sprouts!


And, in totally unrelated news, I finished the anime Gurren Lagann yesterday.  I'm still pining.  Do any of you guys watch anime?


Adapted from Love Veggies Yoga

Mix together ~2 cups cooked black beans, 1 small sliced red onion, and 1 or 2 sliced carrots.  Stir in chili powder, chipotle powder, nooch, salt and pepper, garlic powder, mustard powder, worchestire sauce (Annie's brand is vegan), molasses, and maple syrup.  Bake at 350 for 20 minutes, then add trimmed/halved Brussels sprouts, and cook for 20 more minutes.

Ricotta & Pesto Pizza

Mmm... pizza... pesto... mmm...

Pesto: blend together 1/2 cup walnuts, 1 packed cup basil leaves, 1 hefty cup spinach leaves, 1/4 cup parsley, a bit of nooch, juice of 1 lemon, and enough mirin to make it a pesto consistancey.
Tofu Ricotta: Press and crumble tofu, and mix with lemon juice, Italian seasoning, nooch, and garlic powder.
Grill chopped red onion and mushrooms on a panini press, and wilt some spinach.
On a pizza crust, spread a layer of pesto, followed by spinach, mushrooms, and onions, and lastly the ricotta.  Cook/heat for a few minutes on the panini press.

Old Bay Soup

Here's an old favourite of mine.  No one can say this isn't flavourful!  Oh, and don't be shy of using green beans in soup - I was at first, then I was like "Oh, this is perfectly fine"

Veggies: Onion, carrots, garlic, green beans
Then came tomato sauce, diced tomatoes, a bit of soy sauce, water, veggie bouillon, celery seed, thyme, Old Bay seasoning, a spicy spice mixture, and quinoa.  And pinto beans.
Lastly, thickened with a corn starch slurry, and served with veggie meat... and I am happy.

Ranch Pizza

Mmm, Friday pizza night!

I used this pizza crust, cooking it on the panini press
Topped with a vegan ranch dressing: tofu mayo (partially cooked silken tofu + lemon juice), a bunch of green dried herbs (think basil, majoram, oregano, etc), onion powder, and garlic powder
The came bell peppers and onions grilled on the panini press
Then tofu marinated in pinapple juice, soy sauce, and maple syrup, then grilled on the panini press
A few olives
And FYH mozzarella cheese/
All cooked together on the press.........

Quinoa Salad

Erm.  Not much to say tonight.  I'm rather tired.. although the salad was pretty good and easy.
I totally meant to add tofu - had it in the micorwave and everything!  Then I forgot.  I had just finished my portion, and then I was like "Oh my gosh, the tofu!"  But it was super good, none the less...

Ok, so:
Quinoa + finely chopped sauteed onion, cooked in half orange juice and half water, mixed with nooch and spicy seasoning + paprika
Shredded carrots, chopped oranges, sliced avocado
Walnuts
Tofu mayo (partially cooked silken tofu blended with lemon)

Lentils, Brussels, and Onions

Using up leftovers today... You know, I had the last of my AP exams today.  When I was not testing, I was literally in a stupor, staring at the wall... and thinking about this recipe.  It took me all day to come up with it.  Shows you how well my brain is working right now...

I combined cooked brown lentils and leftover grilled onion and brussels sprouts with a sauce of maple syrup, soy sauce, mirin, brown sugar, and orange zest.  This was all heated in a wok, then topped with pecans, and served.  Make sure to use the orange zest, because that totally makes the dish awesome!

TVP Sliders

Burgers make me feel like a rebel...

Finely chop and saute 1/3 cup onion, 1 1/2 cups button mushrooms, and 2 cloves garlic until all the liquid is gone.  Chop a bit of parsley.  Mash 1 1/2 cups canellini beans.  Then mix all of this stuff together with 1 1/2 cups TVP, 1/2 cup nooch, 1 tbsp cider vinegar, 2 tbsp maple syrup, 1 1/2 tbsp soy sauce, 1 tbsp smoky/spicy seasoning, 1 tbsp Spike seasoning, 1 tbsp veggie bouillon, and 1 tbsp mirin.  Stir in a scant 1 cup hot water, so the TVP soakes it up.  Add in whole wheat flour as needed - I used a couple tbsp.  Shape into patties and bake at 375 for 20 minutes.
Serve on buns with pickles, vegan cheese, and ketchup!

Single Serving Use Up Leftovers Soup

Despite the purpose of this soup... it turned out really yum.  Much better than expected, which is always a NICE surprise.
Speaking of... I could use more nice surprises.  Couldn't you? ;)


Veggies were carrot, garlic, onion, and broccoli.  Spices were veggie chicken bullion, Spike Veg-It seasoning, Italian seasoning, and cooking sherry.  Other stuff included orzo, fake meat, red kidney beans, and corn starch slurry to thicken.

Pinapple Stir Fry

Oh, gosh.  NO PICTURE!  I feel really bad... but my camera ran out of power before I got anything, and there weren't any leftovers.  Boohoo.  Oh well, most stir fries look the same, anyhoo...

Mix together 1/3 cup pinapple juice, 2 tbsp rice vinegar, 2 tbsp soy sauce, 1 tbsp ketchup, and 1 tbsp agave.  Cut two slabs of tofu, press, and marinade overnight in sauce.  **So, Wednesday I thought I was going to make this dish, and I got the tofu marinading, but it turned out that I didn't have the energy to throw this together.  So I let the tofu marinade overnight, and made the dish Thurday.  Wow, flavour boost much!  I think, when possible, I will let the tofu marinade overnight, as it soaks up so much more flavour.
The next day, saute onion, bell pepper, mushrooms, garlic, broccoli, and spinach.  Grill tofu on a panini press.  Mix corn starch with the leftover marinade, and use as the stir fry sauce.  Serve over wild rice.

Orzo with a Very Flavourful Sauce

So, when I say flavourful, I mean FLAVOURFUL.  This packs a punch.  Not for the faint-hearted... Adapted from PPK.


Heat 3/4 cup pineapple juice, and then add in 3/4 cup TVP.  Allow TVP to soak up liquid, adding more juice as needed. 
In a saucepan, saute 1 small chopped red onion and ~2 cups broccoli florets.  Add in 6 cloves of roasted garlic (smashed with the flat side of a knife), 1 cup white wine, anise, rosemary, 1 cup pineapple juice, veggie bouillon, 1 tbsp flour, 1/2 cup chopped sun dried tomatoes, nooch, and coriander.  Then add in ~2 cups torn spinach, and allow to wilt.  Serve sauce over cooked orzo pasta, and top with TVP.

Veggies were onion, carrots, garlic, and bell pepper.  Then soaked pinto beans, tomato sauce, and diced tomatoes went in, along with some brown rice.  Spices were cinnamon, majoram, brown sugar, nutmeg, coriander, and 2 bay leaves, along with veggie bouillon.  Towards the end frozen peas, chopped parsley, and a corn starch slurry were added.

Pea Risotto, Grilled Tofu, Grilled Mushrooms

It's been AGES since I've made risotto.. which is odd, because I have occasional cravings for it every once in a while... so, tonight I made this.  It turned out really good, and I especially liked the tofu!

Press a few slabs of tofu, and then marinade in soy sauce, agave, and ketchup.  Grill on a panini press with sliced crimini mushrooms.
Saute 1/2 small chopped red onion and chopped garlic.  Add a generous cup of risotto rice, and 2/3 cup white wine.  Once the wine is almost gone, add water and vegetable bullioun, adding more water until the rice is SUUUPER creamy, and really cannot take any more water.. about 35 minutes.  Also, stir the rice as much as you can - like, every other minute, give it a few seconds of good stirring. Once the rice is saturated, add in peas, nooch, and butter extract.  Serve topped with tofu and mushrooms.

Black Bean Tortilla Pizza

Yes, I left the broiler on a bit too long... but it still tasted great.  Just goes to show you how good this dish is ;)

Saute sliced red onion and red bell pepper.  Mix together 3 tbsp soy milk, 2 spoonfuls nooch, garlic powder, onion powder, a smidge of dijon mustard, a smidge of flour and a drop of butter extract*.  Add the nooch mixture into the veggies along with some black beans. 
Spread a tortilla with tomato sauce, then add the veggies. Sprinkle with cumin, chili powder, chopped parsley, and FYH mozzarella.  Bake at 350 for 10 minutes, and then broil for a minute.  Not more than 2... unless you like burnt crust...

*So, I found some butter extract at Walmart yesterday... appearently it's VEGAN (but still has lots of chemicals... you can't have everything...) .  Who knew?  So, instead of using Earth Balance or some high calorie thing like that, I'll use this stuff... this opens up so many possibilities.

Black Bean Soup

Another busy night, another quick post...

Veggies were onion, garlic and carrots.  Added diced tomatoes, tomato sauce, black beans, brown rice, Cowboy seasoning mix (could also use taco seasoning), veggie chicken bouillon, vegetable bouillon, chili powder, dried ginger, fresh oregano, fresh cilantro.  Thickened with corn starch, and served with fake meat.

Tofu, Mandarin, Grilled Veggie, and Mixed Lettuce Salad

All I have to say: wow.  I've never had fresh arugula before (it's homegrown, actually).  Wow.

The base was iceburg lettuce, then came arugula, torn cilantro, shredded carrots, canned mardarin oranges, grilled onion/mushrooms, and leftover tofu.
Dressing was tofu mayo (partially cooked silken tofu mixed with lemon juice) and the juice from the mandarines.
