[Vegan] Meaty Beans
Saute some chopped onion, and add TVP. Add enough water to rehydrate the TVP. For seasoning, add in a splash of soy sauce, paprika, bbq sauce, vegan worchestire sauce, chili powder, home made veggie broth powder.
Add in cooked beans (I used a mixture), along with canned tomato sauce.
Top with goat cheeze.

Quickie Quesadilla
Ok, this recipe looked too weird not to try, so I made it the other night... Yes. Yeeeeees. It was good!
Spread a tortilla with cranberry sauce (made with stevia, chunky kind), pistachios, vegan goat cheese, and grilled onion + broccoli. Simple, but it really has that OMG WOWZA factor!

Lunch Wrap + Blueberry Muffins
Double whammy today!
A) I'm proud of myself for starting to be braver about eating raw foods - like onion. I used to be so scared to eat raw foods like onion and cabbage, because I thought it would mess up my stomach (don't ask). However, my courage is slowly returning. Thus, I put raw onion in my lunch wraps, and am loving it!
B) Have been searching for frozen blueberries for a llllllooooong time, and finally found them! I don't like fresh blueberries (I know, don't hate), but decided to try frozen. Voila, I like 'em!
And with all of that...
Muffins are from HHL, changes are whole wheat flour, baking blend stevia in place of sugar, omitted orange juice and oil, gingerbread cookie tea, and no almonds. 24 mini muffins at 35 calories per muffin.
The wrap is adapted loosely from VegBurgers. It consists of:
- avocado
- raw red onion slivers
- silken tofu blended with lemon and cilantro,
- iceburg lettuce
- smoky cashew-pesto cheese, using this pesto recipe (omitting the oil, using water instead, and omitting the miso), and adding sun dried tomatoes to it
- tofu, pressed, cooked on the panini press after being smothered in bbq sauce (omitting the oil, omitting the bourbon and adding vegan worchestire sauce and rum extract)
Pizza crust topped with bbq sauce, paninied mushrooms and red bell pepper, arugula, and the cheese from above.

Roasted Pepper & "Feta" Pizza
Featuring bell pepper made two ways...
And the fabulous feta cheese! I swear, this stuff tastes like the Tofutti Herbed Cream Cheese. Weird. But good.

1/4 cup tomato paste
1/2 roasted red bell pepper
Fresh basil and oregano
1/2 cup sauteed onion
1 clove sauteed garlic
Spread onto a pizza crust, top with bell peppers cooked in a panini press, feta, and fresh oregano leaves. Cook until heated through.

feta cheese,
garlic,
onions,
pizza,
tomatoes

Very Full Burritos with Salsa and "Feta"
Wraps are so frustrating to photograph... sorry.. (it doesn't help that I was hungry!)
I promise you, though, these were excellent. Filling, flavourful, and just messy enough.
Adapted from Oh She Glows
On a panini press, cook sliced onions and mushrooms with some chopped garlic.
Mix with heated:
- diced & cooked potato
- black beans
- chopped basil & parsley
- nooch
- paprika
Pile into a wrap, and top with feta and salsa

Nacho-Themed Quinoa
Weee! Nachos! Erm... nacho quinoa. Nat 'cho quinoa!
Did I just make any sense at all? I made that traditional bad pun there, at the end. Can you tell? (sorry, I'm really tired at the moment.)
Anyhoo, this was fun to make and eat. Can't beat quinoa and avocado, can you now...?
Enjoy!
Adapted from Sketch-Free Eating
Mix quinoa with a very generous amount of chili powder.
Cook chopped bell pepper and onion on a panini press.
Top with heated black beans, crisped (in the oven) tortilla strips, diced avocado, shredded lettuce, salsa, and the best cheese in the world.

Cheesy Quesadillas
Adapted from Keepin It Kind
Blend until veeeery smooth: this queso cauliflower sauce, minus the miso, jalapenos, and hot sauce, and sauteing the onions and cauliflower before blending.
On a tortilla, spread ~1/2 cup sauce, jarred salsa (or make your own - that's what I'll do next time!), and the best cheese in the world; fold in half. Cook in the oven or on a panini press until heated through and crispy, about 20 minutes.
This should make about 4 quesadillas.
8.8.12
Arugula and Potato Pizza
So, I've noticed that potato pizzas seem to be all the rage right now..
So, OBVIOUSLY, I had to join the fun!
Aren't those fingering potatoes the c-uuu-test things in the world?
Ok, now I'm just blabbering...
Adapted from WTHDAVEA
The usual crust, cooked on the panini press
Topped with the best cheese in the world
Sprinkled with rosemary
Topped with grilled onion and boiled fingerling potatoes
And finished with a bit of arugula

Sloppyyyyyyyyyyy Joes!
So, I was volunteering at a food pantry last Friday... and they were going to be closed to the public for the next 4 days, so they needed to give away all of their bread and desserts.
They had piles of it. I mean, PILES. Probably over 2000 loaves.
Unfortunetly, they were not able to give it all away - clients took all that they could for their families, but there was still leftover bread.
So, about 750 loaves of perfectly good bread were thrown away. I took a few loaves home, mostly for M to make PB&J sandwiches, but... what a waste. It killed me.
Adapted from Robin Robertson
- A handful of mushrooms, finely chopped
- 8 oz tomato puree
- ~1/3 cup TVP
- Fennel seeds
- basil
- sumac
- garlic powder
- sage
- paprika
- Italian seasoning
- Burger buns, cheese, pickles to serve
Sautee the mushrooms, and add remaining ingredients and simmer for ~30 minutes, until the TVP has absorbed the tomato. Serve on buns, topped with pickles and the best cheese in the world.

Chilli Cheese Dogs

I used white wheat buns by Nature's Own (100 cal)
Yves veggie dogs (50 cal)
Topped it with cheese.
Pickles. Duh.
And chili...

cooked white beans,

finished off with a spoonful of cornstarch to thicken.
MMMMM......

What's Up Wednesday #6
Interesting article about agave - Why I Never Use Agave Nectar. I never knew this stuff!
I tossed leftover veggies/setian on a bbq sauce - slathered bun, and called that dinner. (Ok, so I had my usual soup and salad too...)
Friday was a MASSIVE cooking session for me!
First up, I made Colby Cheese from Ordinary Vegetarian. This was my first time trying agar... THAT STUFF IS SO WEIRD. No kiddin'... I omitted the lemon juice (all my lemons went into making lemonade!), used 2 roasted bell peppers, cashews, and straight up sesame seeds instead of tahini. It smelled fabulous...
Secondly was a strawberry bbq sauce, which also smelled really good. I slathered it on tofu slabs, and stuck that on a sandwich. Uh, YUM! (Adapted from Vegan Yack Attack) Changed to the sauce: half recipe, 3/4 cup strawberries, add a bit of water, and ~1/4 cup sugar free blueberry jelly... I ran out of strawberries...
Lastly was this super-awesome-amazing salad dressing from Fat Free Vegan. I followed it pretty closely, just doubled it, used a shallot in place of onions, and used sesame seeds in place of tahini. Oh, gosh, this is the BEST dressing I have made in ages.. Susan is such a dressing genius.
And on Tuesday, I made a little army of vegan sausages! OK, guys, repeat after me: I will read the instructions in the recipe and not blindly assume that all water goes directly in the dish.
I totally added the two cups of water to the gluten... and you can imagine how watery THAT turned out... -_- Oh, well. I ended up omitting the apple part of the sausages, using 1/2 cup oat flour in place of oats, 1 1/4 cup gluten, and 1/4 cup brown rice flour in place of rice. They actually turned out realllllly good, though. Although they did need about 45 minutes of baking time, not 30. But, still, I think the flavour can best be discribed as 'calming', if that makes any sense at all...
One last thing... this morning I made Coffee Gingerbread Oatmeal... mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm.
Good stuff. I made bottomless oats, and then added the banana and spices from this recipe (and stevia), using instant coffee powder in place of brewed coffee.
Oh, sorry, I lied. HERE's the last thing... I made a coffee flavour of my b-fast tofu dip, which went very well with pizzerts. Just blend silken tofu, almond milk, instant coffee grounds, and stevia.

Mushroom-y Burgers
Yeah, there are more than a MILLION veggie burger recipes out there.
So, really, this one is just a drop in the bucket.
So, tell me, does it look like I care? I'm gonna post this, either way! ;)
Adapted from WTHDAVEA
In a blender (I used Mister V), finely chop/blend 1/2 lb criminis, 1/2 carrot, 1 small red onion, and 1 clove garlic. Don't sweat it if there are a few big chunks. (The mixture will look pretty gross... sorry!) Pour into a frying pan, and saute for about 8 minutes to get the onions cooked. Stir together with 1/2 cup dried quinoa cooked with 3/4 cup water, ~1/4 cup nooch, ~1/2 cup flavoured bread crumbs, 1 tbsp flax meal, paprika, a bit of bbq sauce, Italian seasoning, and a splash of soy sauce. Cook for ~20 minutes on a panini press (just plop some blobs on the press and kind of shape them into burgers). Serve with buns, pickles, burger-tofu-mayo, and cheeze sauce.

TVP Burgers
Epic burger-ness!
Yay!
And, like M said, the pickles are the best part. (Totally kidding ;) )
Adapted from Melomeals
For the sauce: blend together 1/2 cup tofu, 2 tsp onion powder, 2 tsp garlic powder, a few pickles, liquid smoke, and 1 tsp dried mustard. Set aside.
Bring 2 cups of water to a boil. In a large-ish bowl, mix together 1 cup tvp, 1/2 tbsp garlic powder, 1 tbsp onion powder, fresh chopped oregano, sage, paprika, 1 tbsp flax meal, 3 tbsp nooch, 1/3 cup oatmeal, and 1/2 cup italian flavoured bread crumbs (whew! That was a lot!)
Pour about 1/2 of the boiling water into the tvp mixture, and add 1/2 tbsp soy sauce, liquid smoke, 2 tbsp ketchup, and a bit of balsamic vinegar. Add water until the mixture can be formed into patties. Shape into patties and bake at 350 for about 30 minutes. Serve on hamburger buns with tofu sauce, cheeze sauce, and pickles!

Spicy Pineapple Pizza
I've just started loving cooked pineapple.
You should too! ;)
Adapted from That Was Vegan
My usual crust was topped with a sauce of a little bit of soy sauce, nooch, stevia, rice vinegar, chili paste, and mostly ketchup/bbq sauce.
Then came sliced/paninied onions, pineapple, and this cheese. All grilled on the panini press for a few minutes... wow!
What's Up Wednesday #3
Hm... first time making almond cheese! I made a lightened up version by Healthy Hipster (using lemon juice instead of lime, Italian seasoning in place of curry powder, and sweet potato), and put it on this pizza! It was pretty good - obviously, not EXACTLY like cheese, but it had an excellent flavour. I was highly pleased.
Made a single serving chocolate cake from CCK for my b-day! It was alright, but I think I'm not a HUGE fan of baking in the microwave. Things just don't turn out as well. But I made her Reeses Pieces frosting (using sugar free syrup, and PB2), and that was super yum - I ended up just dipping my cake in it. You have NO idea how long it's been since I had cake with frosting - it was such a treat!
Speaking of my birthday, lookie at what M got me.
I AM NOW THE PROUD OWNER OF A VITAMIX!
That's right... be jealous. I can't wait to play with my new toy! Squee!!
And oatmeal continues to pour out of my kitchen. Not literally. But I did make bottomless oats again, this time Banana Bread flavoured (using maple syrup instead of molasses, and using 1/3 of a banana). I have found that the oats are best simmered really low with the lid on the pot for about 1 1/2 hours - then they get nice and thick, and no liquid is gone - hence, more food ;) !
And, I made Chai Oatmeal with the bottomless oats - nixing the fennel, and adding maple syrup, using pre-ground spices, and Foodie Fiasco's low cal cookie butter
