'Sausage' and Mushroom Cream Sauce over Rice

Well, as I should be studying for physics and french, I'll try to keep this short.
 
 
Heck, who am I kidding?  Studying is the LAST thing I want to do right now.



... well.  Yes.  This dish.  M reeeeeeeeeeally liked it!  Nice and wintery.  The sad thing is, it's been in my line-up for AGES, and I just now got around to making it.  But it's made now, and I have had the delightful experience of eating it.  My life just got that much better.

 
Adapted from Fat Free Vegan
 
Saute until tender:
  • 1 small chopped onion
  • 1 coined carrot
  • 1/2 chopped bell pepper
  • 8 oz sliced mushrooms
  • 4 cloves chopped garlic . 
 
 Add in:
  • 1/2 tbsp smoked paprika
  • splash of soy sauce
  • 1 tbsp thyme
  • lots of chopped fresh basil
  • 1 1/2 cups water + vegetable broth powder
  • 3 tbsp whole wheat flour (whisk this in slowly)
  • A good amount of chopped 'sausage' - I omitted the oil, and baked this at 350 for 30 minutes, until poofy and firm
 
Cook until thickened, and serve over brown rice.

What's Up In My Kitchen - Recipe Round-Up (Finally!)

Ok, go glance at this article.  It will make you smile.

Blended chia pudding: if you don't like the texture of chia pudding, just blend it!  Makes all of the lumps go away, and it has the texture of yogurt.  Here, topped with piles of granola.

 
Made a batch of tofu feta.  Only this stuff is better than your normal tofu feta, because it's a LOT firmer.  Changes: 1/3 cup agar flakes, 3 tbsp olive oil (I ran out).  Wow, this stuff was good on a salad!
 
Pancakes... Mmmm... Sans frosting and raisins (which I left out and added a few pepitas), these make 2 292 calorie servings.  And the servings are HUGE!  I wanted to make the frosting, but forgot to chill my can of coconut cream... :(
 
 
 
Roasted Veggie Salsa - my first shot at homemade salsa.  I would recommend using less lime juice, but otherwise I loved this recipe.  Oh, and I used hatch chilis instead of jalapenos.  Because I have ALWAYS wanted to use those things...
 
Quinoa/Adzuki bacon.  Dang, this stuff smelled SO good in the oven.  Changed: cooked the beans, cooked up 1/3 cup quinoa to replace the buckwheat, Italian seasoning instead of thyme, and no oil.  It was a bit crumbly, but that was OK by me.
 
As for lunches... well, I've made a wrap with peaches, basil, lettuce, avocado, and sugar free blackberry jelly - yum!  Lots of fruit!
 

 
 
My other wrap has been peaches (can you tell I like peaches?) with the tofu feta, bacon, lettuce, and avocado.  Again, yum!  (adapted from Iowa Girl Eats)
 

 
 
Another new b-fast food: banana bread in a bowl.  Blendm, let sit for 45 minutes or so, and it's like ice-cream for breakfast.  Did I mention you should top it with chocolate (which turned out very good, by the way!)
 
 
 
 Salad dressing!  Good for using up a surplus of basil... Fat free and creamy basil blast for your salad!
 
And, finally, 100% whole wheat strawberry pepita muffins (adapted from Chocolate and Carrots)!  Mix:
2 cups whole wheat flour
1 tbsp + 1 tsp baking powder
1/3 cup pepitas
1/2 tbsp cinnamon
1/4 cup stevia baking blend
1 cup almond milk
1 tbsp apple cider or white vinegar
1 tsp vanilla extract
1/2 cup unsweetened applesauce
1/3 cup chopped frozen strawberries
 
Pour into muffin tins and bake (I have only a mini muffin pan - this made 24 muffins, 250 calories for 7 muffins.  Bake for about 17 minutes for mini muffins, probably 27 for regular)

Yukon potatoes or pasta (I attempted the dumplings... didn't work too well...)
Corn starch slurry
Seitan chicken (minus the oil, baked at 350 until poofy)

Chilli Cheese Dogs

Yves veggie dogs (50 cal)
Topped it with cheese.
Pickles.  Duh.
And chili...

a wee bit of finely chopped carrot and onion, sauteed,
cooked white beans,
tomatoes, crushed in a Vitamix,
TVP,
molasses, garlic powder, liquid smoke, steiva extract, paprika, and chili powder,
finished off with a spoonful of cornstarch to thicken.

You know, it was kind of funny-  M said the broth tastes buttery.  Why?  Don't ask me... -_-  No clue.  It's good though...

Seasonings: veggie chicken bouillon, chopped fresh parsley, bay leaves, juice of 1 lemon, Spike seasoning, dried majoram
Finished with whole wheat shell pasta, cooked chickpeas, a cornstarch slurry, and seitan

Meat n' Potatoes Salad

Yes, this is vegan.  ;)



And we can just pretend that I didn't forget the sweet potatoes in the picture...

Toppings: a few sliced sausages, diced granny smith [apple], boiled fingerling [potatoes], boiled/cubed sweet potatoes
Dressing: well, just sprinkle the salad with nooch, a southwestern-ish seasoning mix, and drizzle with mirin.

What's Up Wednesday #6

Interesting article about agave - Why I Never Use Agave Nectar.  I never knew this stuff!

I tossed leftover veggies/setian on a bbq sauce - slathered bun, and called that dinner.  (Ok, so I had my usual soup and salad too...)





Friday was a MASSIVE cooking session for me! 
First up, I made Colby Cheese from Ordinary Vegetarian.  This was my first time trying agar... THAT STUFF IS SO WEIRD.  No kiddin'... I omitted the lemon juice (all my lemons went into making lemonade!), used 2 roasted bell peppers, cashews, and straight up sesame seeds instead of tahini.  It smelled fabulous...
Secondly was a strawberry bbq sauce, which also smelled really good.  I slathered it on tofu slabs, and stuck that on a sandwich.  Uh, YUM!  (Adapted from Vegan Yack Attack) Changed to the sauce: half recipe, 3/4 cup strawberries, add a bit of water, and ~1/4 cup sugar free blueberry jelly... I ran out of strawberries...



Lastly was this super-awesome-amazing salad dressing from Fat Free Vegan.  I followed it pretty closely, just doubled it, used a shallot in place of onions, and used sesame seeds in place of tahini.  Oh, gosh, this is the BEST dressing I have made in ages.. Susan is such a dressing genius.

And on Tuesday, I made a little army of vegan sausages!  OK, guys, repeat after me: I will read the instructions in the recipe and not blindly assume that all water goes directly in the dish.
I totally added the two cups of water to the gluten... and you can imagine how watery THAT turned out... -_-  Oh, well.  I ended up omitting the apple part of the sausages, using 1/2 cup oat flour in place of oats, 1 1/4 cup gluten, and 1/4 cup brown rice flour in place of rice.  They actually turned out realllllly good, though.  Although they did need about 45 minutes of baking time, not 30.  But, still, I think the flavour can best be discribed as 'calming', if that makes any sense at all...

One last thing... this morning I made Coffee Gingerbread Oatmeal... mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm.
Good stuff.  I made bottomless oats, and then added the banana and spices from this recipe (and stevia), using instant coffee powder in place of brewed coffee.




Oh, sorry, I lied.  HERE's the last thing... I made a coffee flavour of my b-fast tofu dip, which went very well with pizzerts.  Just blend silken tofu, almond milk, instant coffee grounds, and stevia.

"Condensed" Lentil and Rice Soup

No, really.  This soup thickens up so much that it's pretty much condensed soup!  Although, I don't know about you, but I really like my soup that thick... Plus, this soup packs in lots of great flavour.  Normally, I have trouble with lentil soups being so bland, so I have been more heavy-handed with my spices in soups.  And lookie at where it got me!

Veggies: onion, carrots, lots of garlic
Stuffs: brown lentils (presoaked), canned tomato sauce, brown rice, lotsa water
Seasonings: liquid smoke, chili powder, cumin, oregano, chipotle chili powder, veggie chicken and vegetable bullion
Thickened with corn starch, and served with fake meat!

Onion Soup + Extras

Well, I can't just have onions!  Soup must have carrots.  And beans.  And rice.

Saute onions sliced into half rings (or whole rings, if you are feeling patient) and carrots. 
As far as seasonings go: vegetable and veggie chicken bouillon, Italian seasoning, butter extract, fresh basil and parsley.  Then came wild rice.
At the end of cooking, I added cooked gargantuam lima beans, red kidney beans, and pinto beans, along with a corn starch slurry (using up random beans, can you tell?)
Served with fake meat, toasted bread, and cheese, French onion soup style. ;)

Old Bay Soup

Here's an old favourite of mine.  No one can say this isn't flavourful!  Oh, and don't be shy of using green beans in soup - I was at first, then I was like "Oh, this is perfectly fine"

Veggies: Onion, carrots, garlic, green beans
Then came tomato sauce, diced tomatoes, a bit of soy sauce, water, veggie bouillon, celery seed, thyme, Old Bay seasoning, a spicy spice mixture, and quinoa.  And pinto beans.
Lastly, thickened with a corn starch slurry, and served with veggie meat... and I am happy.

Single Serving Use Up Leftovers Soup

Despite the purpose of this soup... it turned out really yum.  Much better than expected, which is always a NICE surprise.
Speaking of... I could use more nice surprises.  Couldn't you? ;)


Veggies were carrot, garlic, onion, and broccoli.  Spices were veggie chicken bullion, Spike Veg-It seasoning, Italian seasoning, and cooking sherry.  Other stuff included orzo, fake meat, red kidney beans, and corn starch slurry to thicken.

Black Bean Soup

Another busy night, another quick post...

Adapted from Kalyn's Kitchen.



Veggies were onion, garlic and carrots.  Added diced tomatoes, tomato sauce, black beans, brown rice, Cowboy seasoning mix (could also use taco seasoning), veggie chicken bouillon, vegetable bouillon, chili powder, dried ginger, fresh oregano, fresh cilantro.  Thickened with corn starch, and served with fake meat.

Soup with Spaghetti

Here's another soup, pretty similar to the ones I have already made, but still good in its own right...  Adapted from here.



1 large onion was chopped into half ring, and sauteed with an equal amount of carrots, plus several cloves of garlic.  Soaked Peruano beans were added, along with diced tomatoes and tomato sauce, white wine, vegetable bouillon, rosemary, thyme, a bit of soy sauce, paprika, and chopped fresh parsley.  It was simmered until the beans were cooked, then whole wheat spaghetti and a corn starch slurry were added, and simmered until the pasta was cooked... and served with fake meat.

This was yet another good soup.  Yay soup!  Adapted from Kalyn's Kitchen.
Sorry I haven't posted in a few days - I've been so swamped with homework.  AP exams are coming up, and I am going to have a LOT less time for the next few weeks...



The veggies were onion, carrots, cabbage, and garlic.  Spices were vegetarian beef bouillon, vegetable bouillon, fresh parsley, thyme, fresh oregano, chili powder, and cooking sherry.  Other stuff included tomato sauce, diced tomatoes, soaked red kidney beans, and potatoes.  At the end of cooking I added torn spinach and corn starch slurry to thicken.  Served with fake meat.

Lentil and Chickpea Soup

I also made this soouuuupppp!  It was souper thick.  And souper flavourful.  Puns intended.

Veggies were chopped onion and carrots, and minced garlic.  I also added brown rice, tomato sauce, and diced tomatoes.  Seasonings were caraway seeds, Perfect Pinch Sweet and Smoky seasoning mix, oregano, and vegetarian chicken bullion.  Other stuff included liquid smoke, soaked brown lentils, and soaked chickpeas.  This was simmered until the chickpeas were soft, then frozen peas and a corn starch slurry were added.  Served, as always, with fake meat.

Black Bean, Sweet Potato, Rice Soup

This one was much better than I thought it would be.  Exceeds expectations!  Adapted from I Eat Food

Veggies were chopped leeks, carrots, lots of garlic, red bell pepper, cabbage, and sweet potato.  The soup also got tomato sauce and diced tomatoes, brown rice... let's see, the seasonings were ground fennel, smoked paprika, veggie bullion, liquid smoke... I believe that was all.  Obviously, I added fake meat - leftover corned setian, in fact.  There's still a LOT left... I'll be eating it for a week, at the rate I'm going!  Which might not be such a bad thing, after all...

Chili-ish Soup

Om nom nom!  This was good!  Adapted from HHL

Veggies were onion, carrots, and garlic.  Added to that red kidney beans, yukon gold potatoes, diced tomatoes, tomato sauce, vegetable bullion, vegetarian chicken bullion, 1/4 cup mirin, 2 tbsp chili powder, chipotle chili powder, allspice,, 2 bay leaves, apple cider vinegar, 1/4 cup nooch... oh yes, and lots of chopped parsley.  Finished off with a bit of torn up spinach and veggie ham, thickened with corn starch slurry.



And some pictures of asparagus.  I made it, but it didn't taste that good, so no recipe.  The picture was nice enough, though...

Chickpea and Pasta Soup

This soup had a very memorabe flavour.. :)

The veggies were onion, carrot, spinach, and broccoli.  Spices were vegetarian chicken bullion, and lots of smoked paprika and Italian seasoning, fennel, and a vegetable bullion cube.  I also added spiral whole wheat pasta, chickpeas, and vegetarian ham.  Thickened with cornstarch slurry... wow!  Flavourful, much...

Lentil and Black Bean Soup

Hah!  I actually have the picture this time, as well... this is another excellent lentil soup.  Super thick, too!

Ingredients were 1 large onion, equal amount of carrots, lots of garlic, 1 tbsp smoked paprika, 2 bay leaves, diced tomatoes, tomato sauce, soaked lentils and black beans, water and vegetarian chicken bullion, cumin, rice, and parsley.  Yup... I think that's it...
Oh, of course, I tossed in some fake beef too.  Bliss...
