[Vegan] Meaty Beans

Saute some chopped onion, and add TVP.  Add enough water to rehydrate the TVP.  For seasoning, add in a splash of soy sauce, paprika, bbq sauce, vegan worchestire sauce, chili powder, home made veggie broth powder.
Add in cooked beans (I used a mixture), along with canned tomato sauce.
Top with goat cheeze.

Cashew Stir Fry

Alright.. dry fried tofu.  You cube/press tofu, and then 'fry' it in a pan - no oil, no water, no nothing.  Just press on the tofu to get out the moisture over medium heat, and the tofu should develop a nice crust, like it's fried but not really.  GREAT STUFF!
Veggies were broccoli, carrot, mushrooms, garlic, and onion.
Sauce was soy sauce, corn starch, sugar free strawberry jelly, dried ginger, stevia, a wee bit of molasses, rice vinegar.
Served over brown rice, topped with cashews

Mushrooms and Spinach over Rice

Oi.  So, please tell me WHY I work out for an hour every day and the state still mandates that I be in PE.  Seriously.  It's so dumb. 
 
 
Anyway, I'm NO good at sports, I just like to work out.  Sheesh!  We started tennis yesterday, I have no clue how to play tennis (!)... so my wrists hurt like crap... my left hand is really having a hard time typing right now.  Argh.  Seriously.  Why do I have to take the stupid subject?
Although, it does allow me to eat just a wee bit more in the evenings, which is pretty much the only good thing... more yummies for me!

Saute chopped onion, garlic, and mushrooms until tender.  Toss in some spinach (washed, destemmed, and torn), fresh chopped rosemary, nooch, soy sauce, corn starch + water, and home made veggie broth powder.  Add enough water to make it a gravy-type thing, simmer for a few minutes until thick, and serve over rice.  Simple but A-Mazing!

Side note on my life:  Homecoming is tomorrow.  I, obviously, don't have a date, and am not going (will probably be fast asleep when the dance starts at 9).  Is it weird that I'm proud to scoff at people who waste time/money on that stuff?  ;)  I literaly told someone "Why would you spend $100 on homecoming?  Do you know how much tofu that would buy?"  That totally got so many laughs from my friends... :D

Veggies:
  • Onion
  • Garlic
  • Carrots
  • Canned, diced tomatoes
 
Seasonings:
  • Vegan worchestire sauce (annie's is vegan)
  • Cilantro
  • No chicken broth powder
  • Chili powder
  • Cumin
 
Other:
  • Setian of choice
  • sour cream, to serve (use stevia, add the nooch - deeeelish!)
  • Pinto beans
  • Corn starch slurry

'Sausage' and Mushroom Cream Sauce over Rice

Well, as I should be studying for physics and french, I'll try to keep this short.
 
 
Heck, who am I kidding?  Studying is the LAST thing I want to do right now.



... well.  Yes.  This dish.  M reeeeeeeeeeally liked it!  Nice and wintery.  The sad thing is, it's been in my line-up for AGES, and I just now got around to making it.  But it's made now, and I have had the delightful experience of eating it.  My life just got that much better.

Saute until tender:
  • 1 small chopped onion
  • 1 coined carrot
  • 1/2 chopped bell pepper
  • 8 oz sliced mushrooms
  • 4 cloves chopped garlic . 
 
 Add in:
  • 1/2 tbsp smoked paprika
  • splash of soy sauce
  • 1 tbsp thyme
  • lots of chopped fresh basil
  • 1 1/2 cups water + vegetable broth powder
  • 3 tbsp whole wheat flour (whisk this in slowly)
  • A good amount of chopped 'sausage' - I omitted the oil, and baked this at 350 for 30 minutes, until poofy and firm
 
Cook until thickened, and serve over brown rice.

Black Bean and Nut Burgers

Hey, guys.  I'm back from the dead.  (All that SCHOOL WORK.  I literally have died 3 times since I last blogged)
 
 
With a really, really good burger.

 
And a single serving hamburger bun!  It's perfected!

 
Single serving bun, adapted from CCK:
 
Mix together:
  • 1/4 cup whole wheat flour
  • 3 tbsp non-dairy milk
  • 1 tbsp applesauce
  • 3/4 tsp baking powder
  • a teensy bit of salt
Plop all of this on a baking sheet coated with nonstick spray, and sprinkle with sesame seeds if you want.  Stick into an unpreheated oven, and turn the oven to 420.  Bake for about 11-13 minutes, until it feels hamburger bun-like.  Done!  That was easy!

For the burgers (adapted from Oh She Glows):

Mix together, form into patties, and bake at 350 for 30 minutes:
  • 1/2 cup onion, chopped, sauteed
  • 1 clove garlic, minced, sauteed
  • 2 1/2 tbsp flax seed + 1/2 cup warm water
  • 1 1/2 cups breadcrumbs (make sure they are vegan - some brands aren't)
  • 1 cup grated carrots
  • 1 cup cooked black beans
  • 1/4 cup chopped parsley
  • 1/4 cup chopped almonds, toasted
  • 1/3 cup sunflower seeds, toasted
  • Soy sauce, cumin, oregano to season
Serve on buns with avocado and pickles

Simple Soba Salad

You really can't get much more clean-out-the-fridge-before-vacation than this dish.
 
 
Man, you should have seen the inside of the fridge after this.  It was 99% empty!  Almost scary...

Sauce: blend
  •  1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • a pinch of dried ginger
  • stevia extract to taste
  • 1 tbsp lemon juice
  •  
Grill tofu slabs drizzled with sauce, broccoli, red onions, red bell peppers, and carrots.  Serve over soba noodles, topped with avocado and leftover sauce.

Pearl Couscous, Veggies, Tofu

I've had this little container of pearled couscous in my pantry for ages now.  It's actually expired... but the couscous totally tastes fine, and I'm not dead yet.  Just goes to show you that the labels are usually quite generous with their dates.
 
 
I don't know if you guys even CARE or not...

 
But I DO know that you care about a pile of carbs, protein, veggies and olives!

First up, press your tofu slabs - 2 per person

Cook some pearled couscous (aka Israeli couscous)

Mix together
  • Mirin
  • Soy sauce
  • Rice vinegar
  • Liquid smoke
  • Dried thyme
  • Lotsa fresh parsley
  • A drop of butter extract
  • Vegetable bouillon
  • A few drops stevia extract
Place chopped onions, red bell pepper, and tofu slabs on a panini press, and drizzle some of the sauce over the tofu.  Cook for ~8 minutes...
Serve: couscous, veggies, tofu, leftover sauce, and black olives.

Soba Noodle Salad

This was pretty easy: cooked soba noodles, tossed with shredded carrots and cabbage
The sauce was:
lime juice
mirin
soy sauce
sesame oil (a weeee bitty bit)
stevia extract
It was topped with tofu, drizzled with the sauce, and grilled on the panini press.

And no one will blame you if you top it all off with cashews.  Totally slipped my mind...

Oregano Quinoa Soup

Oh, yeah... I chose the best day to make soup!


Hottest day this week... 108.  You've GOT to be kidding, right?


Bleck.  Oh, well.  I needs my soup.  ;)


(This BURSTED with oreganoy-goodness!  I literally whacked off about 20 stems from my plant.  Although it's so big right now that it doesn't look like any was taken off...)

Veggies: carrots and onions
Stuff: quinoa, lentils
Seasonings: veggie chicken bouillon, liquid smoke, nooch, a bit of soy sauce, paprika, and more fresh oregano than I care to talk about (I was plucking that stuff off the stem for a good 10 minutes!)
Finished with a corn starch slurry and seitan.

Rice, Black Bean Sauce, Grilled Veggie and Seitan

I very quickly learned that this was not a summertime dish.


But, after sweating through an hour of having 3 burners on (I made ramen soup on the same night)...


I was more than happy with the results!


The sauce was just right, and how I DO love paninied veggies!


First up, cook up some brown rice.
Next up, saute a hefty amount of chopped garlic in a sauce pan, then add 1 1/2 cups cooked black beans, 1/2 cup water, 1 scant tbsp nooch, generous tbsp soy sauce, 1/2 tsp worchestire sauce (Annie's is vegan), scant tsp onion powder, 1 bay leaf, 1/4 tsp powdered ginger, 2 tbsp chili powder, 1 tsp cumin, 2 tsp dried or fresh (remember fresh is better!) oregano, liquid smoke, juice of 1 large lime... whew, I think that's it!  Oh, right, mix up a corn starch slurry and add that too.  Then let your mixture bubble away for abut half an hour, until nice and thick.  It will taste veeeeeeery good, I promise!
Finally, grill up some sliced bell pepper and onion on a panini press, and add seitan strips (the first recipe) when they are about 2/3 done. 
Finally, plate everything up!

This looks really complex, but it's not, really.  PROMISE.

Mushroom-y Burgers

Yeah, there are more than a MILLION veggie burger recipes out there.

 So, really, this one is just a drop in the bucket.


 So, tell me, does it look like I care?  I'm gonna post this, either way! ;)

In a blender (I used Mister V), finely chop/blend 1/2 lb criminis, 1/2 carrot, 1 small red onion, and 1 clove garlic.  Don't sweat it if there are a few big chunks.  (The mixture will look pretty gross... sorry!)  Pour into a frying pan, and saute for about 8 minutes to get the onions cooked.  Stir together with 1/2 cup dried quinoa cooked with 3/4 cup water, ~1/4 cup nooch, ~1/2 cup flavoured bread crumbs, 1 tbsp flax meal, paprika, a bit of bbq sauce, Italian seasoning, and a splash of soy sauce.  Cook for ~20 minutes on a panini press (just plop some blobs on the press and kind of shape them into burgers).  Serve with buns, pickles, burger-tofu-mayo, and cheeze sauce.

Stir Fry + "Deep Fried" Tofu

How I love thee...

"Deep Fried" Tofu Stir Fry, adapted from That's So Vegan

For the tofu: press a brick of tofu, and cube.  Toss in corn starch, and bake 400 for about 25 minutes, until hard.
Veggies: Onion, broccoli, carrots, bell pepper
Sauce: Stevia, chili paste, mirin, maple syrup, soy sauce, hoisin sauce, pineapple juice, and (more) corn starch
Served over brown rice.

My usual crust was topped with a sauce of a little bit of soy sauce, nooch, stevia, rice vinegar, chili paste, and mostly ketchup/bbq sauce.
Then came sliced/paninied onions, pineapple, and this cheese.  All grilled on the panini press for a few minutes... wow!

Setian and Mandarin Stir Fry

Sorry... What?  You haven't had pineapple in a stir fry?

Tofu + Green Bean Stir Fry

Just another quickie stir fry.  It was really good, 'cause we haven't had stir fry in a while.  And I FINALLY used up the tofu in the freezer.  Yes, this has a lot of garlic.

Sauce: corn starch, soy sauce, mirin, agave, chili paste
Veggies etc.: green beans, bell pepper, fried tofu, shallots, 3-4 cloves garlic per serving (!), grated ginger
Served over brown rice with chopsticks, no duh!

Flavourful Lentil Bugers + Homemade Buns

I used the same recipe as I used for the slider buns I made a while back (subbing applesauce for the oil), only this time I made 18 buns - so it came out to about 120 calories per bun.  Not bad, eh? (and I sprinkled them with black sesame seeds, just for the fun of it!)

And... Ok.  So, I know that these don't look very attractive.  So.. your point?  They taste A-MAZING!!  So much flavour in such little patties ;)



Adapted from Keepin' It Kind

Soak 1.5 tbsp flax meal in 1/4 cup warm water until it gels up.  Chop and saute 8 oz criminis and a few cloves garlic.  Blend all of this (I used an immersion blender) with 1 1/4 cup cooked brown lentils, 1 tbsp tomato paste, 1 tbsp soy sauce, liquid smoke, basil, thyme, sage (fresh herbs, if you can), 1 cup Italian flavoured bread crumbs, and a few chili flakes.  Yes, it will be wet.  Plop pattie-sized glumps (yes, that is a technical term) on a sprayed baking sheet, and bake at 350 for about 30 minutes, until they start smelling good.  Serve on buns with pickles, lettuce, ketchup, and vegan cheese.

Roasted Chickpea and Watercress Salad

Summer in a bowl...

Chickpeas: mix cooked chickpeas with soy sauce, maple syrup, nooch, liquid smoke, onion powder, paprika, and salt/pepper.  Bake at 350 for 30 minutes.
Dressing: mix 1/2 cup mirin, 3 tbsp lime juice (2 small limes), liquid smoke, agave, and dijon mustard.
Mix watercress and iceburg lettuce, and top with chopped avocado, pineapple, dressing, and chickpeas.
