BBQ Tofu Salad

Yay!  Tofuuuuuuuuuuuuuu!!!!!!


 You have no idea how long I have been wanting to say that.


Yup.



I'm dead serious.



Adapted from Keepin' It Kind
First up, tofu: Cut one slab of tofu per person, press, and then slather with this bbq sauce (using 6 oz tomato paste, not 4, and no need to cook it).  Bake for 30 minutes at 375, and slather with more bbq sauce.
Base: lettuce.
Add in the tofu, black olives, canned mandarine oranges, broccoli, avocado, and top with this dressing.

And, in totally unrelated news, I finished the anime Gurren Lagann yesterday.  I'm still pining.  Do any of you guys watch anime?


Adapted from Love Veggies Yoga

Mix together ~2 cups cooked black beans, 1 small sliced red onion, and 1 or 2 sliced carrots.  Stir in chili powder, chipotle powder, nooch, salt and pepper, garlic powder, mustard powder, worchestire sauce (Annie's brand is vegan), molasses, and maple syrup.  Bake at 350 for 20 minutes, then add trimmed/halved Brussels sprouts, and cook for 20 more minutes.

Quinoa + Tofu + Brussels

Cook up some quinoa, and mix with maple syrup, paprika, cumin, and thyme.
Slice one slab of tofu per serving, and grill on the panini press (drizzleing with maple syrup before), along with some trimmed brussels sprouts.
Serve, sprinkled with cilantro and cashews.  Drizzle with more syrup, if desired.  (Mine was a bit too dry for my tastes.)

What's Up Wednesday #4

Chocolate Covered Katie's granola bars - dipped in my strawberry sauce (the picture, however, is just jam)!  (Used sugar free maple syrup, added cinnamon, and all applesauce, comes to ~800 calories for the whole recipe)

Ohmygosh this article is so sobering: on yahoo.

I made chickpea flour in my Vitamix.  Oh, the NOISE killed me -_-

And then used it in this setian recipe to put in soup, baking at 350 instead of steaming, and omitting the anise and beef flavouring.  That seems to give it a better texture, in my opinion - less rubbery.




And I also made this setian, again baking it, omitting the oil, using 1 tbsp corn starch in place of the tapioca, and using water in place of the wine.  Really good in a sandwich!


Fresh corn on the cob!  First time in years I have tried corn.  My dad would eat corn with fish, so I always associated the two together.  However, the food pantry that I volunteer at got some fresh corn in - I'd say about 1000 ears.  I spent about 2 hours shucking that stuff last Friday... and I was like "I should try corn again!"  So I did a bit of homework, and found this nice little article on Fat Free Vegan.  Shuck the corn, bake at 350 for half an hour.  AMAZING!

Did you guys know that your body does not absorb the calories from fiber!?!?!  Yay!  You learn something new every day.  Here's a good article about it.

And, finally, I made a tasty salad dressing with the last dreggs of the pineapple juice.  First I boiled the juice for a few minutes to reduce it, and then blended that with tofu, fresh oregano, and fresh basil in my Vitamix.  Yum - great summer dressing!

Simple Fruit Sauce: Breakfast Tofu-Syrup

This was born from tofu mayo, and a desire to not eat as much sugar free maple syrup.



Normal syrups are so high in calories..

And others have such weird chemically ingredients!

So, I made this!  (And it gave me an excuse to use The V!)

Blend together 1 cup silken tofu, 1/2 cup sugar free strawberry (or other flavour) jam/jelly, 1/2 tbsp vanilla extract, and stevia to taste (I used 2 spoonfuls).  Chill until ready to use.
Great on pancakes, pizzerts, granola bars, and much, much more!

Pesto + Arugula Pizza

Used this pizza dough, cooked on the panini press
Topped with this pesto
Panini press cooked sliced red onion
Dollops of this cheeze
All warmed up on the panini press, and finished off with fresh arugula

Stir Fry + "Deep Fried" Tofu

Oh, cornstarch...

How I love thee...

"Deep Fried" Tofu Stir Fry, adapted from That's So Vegan

For the tofu: press a brick of tofu, and cube.  Toss in corn starch, and bake 400 for about 25 minutes, until hard.
Veggies: Onion, broccoli, carrots, bell pepper
Sauce: Stevia, chili paste, mirin, maple syrup, soy sauce, hoisin sauce, pineapple juice, and (more) corn starch
Served over brown rice.
